Flourless Peanut Butter White Chocolate Chip Cookies

This might be the easiest peanut butter cookie recipe that I've come across. There are so few ingredients, and I've made it a bunch of times with slight variations. They take 20 minutes total to make and bake, and they are perfect for bringing to friends or family, or for just making after dinner if you want something sweet! 

**Adapted from "Healthy Food for Living"

You will need:
-1/2 cup smooth, creamy peanut butter
-1/4 cup light brown sugar
-1 egg white, lightly whisked
-1/2 tsp baking soda
-1/4 tsp vanilla extract
-1/4 cup white chocolate chips (or semi sweet choc. chips, or even peanut butter chips! anything works, really.)

Directions:
-Preheat over to 350 degrees
-Combine peanut butter through vanilla extract
-Once well mixed, add in white chocolate chips
-Using a spoon, place rounded balls of dough onto a baking sheet
-Bake 10-12 minutes (make sure you don't over bake or the cookies will be dry!)
-Let the cookies cool for about 5 minutes and then enjoy!

Monster Cookies


You will need:
-3 eggs
-1 1/4 cups packed light brown sugar
-1 cup sugar
-1/2 tsp salt
-1/2 tsp vanilla extract
-1 12-oz jar creamy peanut butter
-1 stick butter, softened
-1/2 cup M&Ms
-1/2 cup chocolate chips
-2 tsp baking soda
-4 1/2 cups quick-cooking oatmeal (not instant)



Directions:
1. Preheat the oven to 350. 
2. Combine the eggs and sugars in a large bowl.
3. Add the salt, vanilla, peanut butter, and softened butter. 
4. Stir in the M&M's, chocolate chips, baking soda, and oatmeal. 
5. Drop by tablespoons onto cookie sheet.
6. Bake for 8-10 minutes and cool on wire rack.
